We interviewed Robyn Larocque, Pro-pie-etor of Victoria Pie Co., and asked her to tell us a bit about her business, the products she sells, and give us some insider information on her next venture!
What made you decide to open your business?
Victoria had a pie-hole, and we intended to fill it.
How long have you been in business, and what’s Victoria Pie Co. all about?
We’ve been in business since the Victoria Public Market opened its doors, so two and a half years. We make the best sweet and savory pies in town, totally from scratch, just like Grandma made.
What is your favorite product you sell and why?
Mushroom, Cream and Gruyere Pot Pie. Our most recent customer feedback on it was “it’s like sex on a Sunday.”
What is your best selling item?
Our Sausage, Potato, White Cheddar Hand Pie.
Tell us a bit about your newest venture!
Our homemade, small batch ice cream has become so popular that we are opening an ice cream shop this May, totally dedicated to ice cream! We’ll have old school floats, soft ice cream, hard ice cream, milkshakes, and ice cream tasting flights if you want to be all gourmet about it. We’ve become known for our small batch water buffalo milk gelato, and we’ll be doing that up as well for you dairy-snubbers. We’ll be working with the best local ingredients and will be producing at least a few varieties of “100 mile” ice creams sourced entirely locally. We’ll have the hard ice cream available at Pie Co, in case you don’t want to make the trip up to Bridge St!
Tell us a fun fact about the business…
Little known fact: Our bakers don’t start their day until 8:15am. Unlike other bakeries, you aren’t getting product that is 24 hours old, or more – we bake allll daaaaay, so there’s always something fresh coming out of the oven. We bake small batches at a time, frequently, to get the absolute freshest pies to our customers.
