We chatted with Shilo Butler, Manager of Sutra Restaurant, and learned some fun facts about Sutra!

Tell us a bit about Sutra…

We are under the Vij’s umbrella and have been part of the Victoria Public Market From the opening on September 14th 2013. We have always been fans of Victoria, and its food scene, and felt the Market was a great place for us to enter Victoria. We have a full, unique sit-in or take-away Indian food menu and a liquor license for dine in only, of course. We also offer a line of Frozen take home curries, chutneys and Indian bread along with Vij’s line of spices and cook books.

What is your favorite product that you sell?

Our take home curries are fantastic meals that are great to have in your freezer for those nights you want to have a delicious meal but don’t feel like cooking. These are full meals that take 20 minutes to cook, they are boil-in-a-bag so very little effort and almost no mess to clean up. They are also fantastic for camping!

What is your best selling item?

Our butter chicken has quickly taken the lead as the most popular item.

Tell us something interesting about Sutra that most people don’t know…

Most people do not know that they can rent out Sutra for private parties and for long table dinners – 10 people $450 for food. You get the whole space and we cook for you. The best price in town for a private dinner. And loads of fun.

What does a typical day look like for you?

At the crack of 8 am I get up and ready for work, ride my longboard to the Hudson building, pop in the shop to get the chai cooking, it takes about 45 minutes. After turning on the ovens and fryer I get my morning coffee with espresso from 2% Jazz, relax and enjoy that before heading back into the kitchen to start a batch of common Basmati, make a batch of Naan dough and start a pot of curry or two. Once that is all done, and my line is prepped, I usually get a few early bird Chai drinkers. I start making orders around noon, when my second cook comes in, and lunch gets going full swing. Sometime around 2pm, once we’re all caught up on dishes, I take lunch, clean and make the afternoon prep list. Then I sign out for the day and enjoy our beautiful city!
